Is there a way that I can enter multiple pay schedules in an employees record? In certain situations they get paid different amounts(not overtime pay) by the hour. Could you please send me instructions on how to do so if there is a way I can do this.

Are you using ezPaycheck 2018 version now? You can modify the pay rate when you add a new check. The following guide will help.
